
Crafted in the Tequila Valley from superior blue agave, El Ajetreo delivers a pure modern expression rooted in authentic tradition.

Handpicked by Jimadores, mature agave plants (usually aged 6-7 years) are harvested from Mexico's Tequila Valley. These particular agaves are selected based on their maturity and sweetness.

Cooking of the agave takes place in stainless steel autoclave ovens. The steaming process takes about 24 hours, followed by a resting phase lasting up to another 24 hours.

The roller mill efficiently extracts the sweet juice from the cooked agave fibers destined for fermentation. We carefully adjust the sugar levels by adding water to achieve the optimal concentration before beginning fermentation.

Utilizing our unique in-house yeast, we accentuate the lively, crisp and clean profile of our Tequila Blanco. The Fermented liquid is also known as "Mosto" and typically lasts for a period of 48 to 72 hours.

Also known as 'alambiques' or pot stills, we use a slow distillation process to capture fermentation's varied aromas and flavors. First we separate the heads and tails to ordinario, 'a cloudy liquid.' Second distillation ensures the pure taste of agave, Tequila Blanco.
