El Ajetreo Tequila Blanco stands as a pure spirit, free from barrels or additives, showcasing the essence of Mexico's superior blue agaves from the Tequila Valley. Our sole focus is on crafting Tequila Blanco, blending our distinctively modern flair with traditional production techniques.

Our Process

Harvesting

Handpicked by Jimadores, mature agave plants (usually aged 6-7 years) are harvested from Mexico's Tequila Valley. These particular agaves are selected based on their maturity and sweetness.

Cooking

Cooking of the agave takes place in stainless steel autoclave ovens. The steaming process takes about 24 hours, followed by a resting phase lasting up to another 24 hours.

Extraction

The roller mill efficiently extracts the sweet juice from the cooked agave fibers destined for fermentation. We carefully adjust the sugar levels by adding water to achieve the optimal concentration before beginning fermentation.

Fermentation

Utilizing our unique in-house yeast, we accentuate the lively, crisp and clean profile of our Tequila Blanco. The Fermented liquid is also known as "Mosto" and typically lasts for a period of 48 to 72 hours.

Distillation

Also known as 'alambiques' or pot stills, we use a slow distillation process to capture fermentation's varied aromas and flavors. First we separate the heads and tails to ordinario, 'a cloudy liquid.' Second distillation ensures the pure taste of agave, Tequila Blanco.

Our Story

In the heart of Amatitán, Jalisco. Alberto and Amelia Partida nurtured the dream of making their own tequila. Although time passed, their legacy found new life in their grandchildren; John and Donald Catudal. With 'El Ajetreo' they pay homage to the dreams of their grandparents. This Tequila embodies their hard work, honor and love. Each sip carries the nostalgia of an extraordinary journey. Salud to Alberto, Amelia and the legacy they inspire.
